Roasted Carrot Hummus
Sometimes it just has to be a hummus! Roasted carrot hummus is made super easy and tastes great both as a dip and in a sandwich!

Ingredients
  • 300g fresh carrots
  • 350g chickpeascooked and drained
  • 1 garlic glove
  • 1/2tsp Cumin
  • 1tsp turmeric powder
  • 2tbsp tahini
  • 3tbsp olive oil
  • 1/2 lemon
  • salt, pepper
Instructions
  1. Preheat the oven to 180° C.
  2. Place the carrots in an ovenproof dish or on a baking tray, sprinkle with 1 tbsp olive oil and bake in a preheated oven for about 30 minutes until well done.
  3. Allow to cool for a few minutes. Put the carrots with the remaining ingredients into a blender and puree finely. If necessary, add some olive oil and/or water until the hummus is creamy. Season with salt, pepper and lemon juice.
  4. Served as a dip: Put the hummus on a plate and garnish with some olive oil and fresh herbs. Served in a Sandwich: Spread your favourite bun with fresh vegetables, cream cheese, mozzarella, feta, salad, etc. and the hummus. Enjoy!
