Ingredients
apricot compote
  • 12ripe apricots
  • 0,5organic orangewashed
  • 1tsp vanilla extract
  • 1tsp brown sugar
poppyseed mousse
  • 1cup plain curd cheese
  • 2/3cup cream
  • 2tbsp powdered sugar
  • 2tbsp poppy seeds
  • 1tsp lemon juice
Instructions
  1. Halve and core the apricots and cut the halves apart again in the middle. Wash the orange, rub dry, finely grate the skin and squeeze out the juice. Put the apricots, orange juice, 1 teaspoon orange peel and the sugar in a pot and bring to the boil once. Simmer for 5 minutes. Remove the pan from the heat and stir in the vanilla. Allow to cool for a few minutes, pour into a jar and refrigerate until serving.
  2. Whip the cream until stiff. Mix the curd cheese, icing sugar, poppy seeds and lemon juice in a bowl with a whisk until smooth. Fold in the whipped cream. Add more sugar or lemon juice if desired. Divide the mousse into glasses and refrigerate.
  3. Add the apricot compote before serving.
  4. TIP: Add some extra crunch and flavor with almond granola or chopped cantuccini.
