Mostly we have a fresh salad with grilled halloumi or baked sweet potatoes. Or, one of my absolute favourite summer dishes, a refreshing gazpacho. Mmm.

Ice creams of every kind are of course very popular. But at the moment I especially love to prepare something with plain yoghurt or curd cheese. Such desserts are not only incredibly delicious, but also refreshing. Just perfect for a little break in the shade.

- The poppy seed curd mousse and the fruity, slightly sour apricots are wonderfully refreshing.
If you are expecting guests, you can make this dessert the evening before. For optical reasons, I recommend that you add the fruit to the mousse just before serving. This will keep the layers at their best.
A crispy almond granola or finely chopped canuticcini go very well with this dessert. Both the crunch and the taste are incredibly good on it.
The poppy seed mousse with apricot compote is not only a delicious dessert in the afternoon, but is also really good on a weekend’s brunch table. Nom nom.

- 12 ripe apricots
- 0,5 organic orange washed
- 1 tsp vanilla extract
- 1 tsp brown sugar
- 1 cup plain curd cheese
- 2/3 cup cream
- 2 tbsp powdered sugar
- 2 tbsp poppy seeds
- 1 tsp lemon juice

- Halve and core the apricots and cut the halves apart again in the middle. Wash the orange, rub dry, finely grate the skin and squeeze out the juice. Put the apricots, orange juice, 1 teaspoon orange peel and the sugar in a pot and bring to the boil once. Simmer for 5 minutes. Remove the pan from the heat and stir in the vanilla. Allow to cool for a few minutes, pour into a jar and refrigerate until serving.
- Whip the cream until stiff. Mix the curd cheese, icing sugar, poppy seeds and lemon juice in a bowl with a whisk until smooth. Fold in the whipped cream. Add more sugar or lemon juice if desired. Divide the mousse into glasses and refrigerate.
- Add the apricot compote before serving.
- TIP: Add some extra crunch and flavor with almond granola or chopped cantuccini.
