In a jar or bowl combine the oats, oat milk, flax seeds, chia seeds, syrup and cinnamon. Stir to combine. Place the lid on the jar and refrigerate for 3 hours or overnight.
Before serving add hazelnuts, sesame seeds, coconut oil and maple syrup to a hot pan. Roast for a few minutes until caramelized. Put on a plate while roasting the apple: add another tbsp of coconut oil to a pan and roast the apple slices for 2-3 minutes each side until slightly golden.
Serve the chilled overnight oats with the nut topping, apple slices, almond butter, cinnamon and more maple syrup (optional).
