Ingredients

  • 2ripe bananas
  • 3/4cup brown sugar
  • 1/2cup oat flouror rolled oats ground to flour
  • 1cup all-purpose flour
  • 1/2cup grated hazelnuts
  • 1/2cup Butterat room temperature
  • 2organic eggs
  • 2tsp vanilla extract
  • 1,5tsp baking powder
  • 1/4tsp salt
  • 1 3/4cup fresh blueberries(you can also use frozen ones)

  • 1/2cup powdered sugar
  • 3tsp fresh lemon juice
Instructions
  1. Preheat oven to 350 degrees °F / 170 degrees °C. Prepare a baking tin (21x11cm), greased or lined with parchment paper.
  2. Mash ripe bananas, set aside. Add flour, oats, nuts, baking powder and salt to a bowl and combine.
  3. In a separate bowl cream together butter and sugar with a hand-held mixer until light and fluffy. Add eggs, one at a time, and mix until combined. Beat in vanilla extract. Add bananas to mixture, mixing until combined.
  4. Slowly add flour mixture to banana mixture until just combined. Don’t over-mix. Stir blueberries gently into the batter with a spatula.
  5. Pour batter into prepared loaf pan. Bake for 50-60 minutes, until a toothpick inserted comes out clean. Ovens vary so watch carefully.
  6. Allow to cool completely. Meanwhile combine powdered sugar with lemon juice. Add a few more drops lemon juice if necessary. Glaze the banana blueberry bread with the sugar. Enjoy!
