Ingredients
  • 5 sweet pepperred or orange
  • 1tbsp oil
  • 2 1/3cup chickpeas, cooked and rinsed
  • 3/4cup sun-dried tomatoesin olive oil, rinsed
  • 1/3cup water
  • 1/3cup tomato paste
  • 3tbsp Tahin
  • 3tbsp olive oilor the oil from the tomatoes
  • 2tsp salt
  • 1tbsp lemon juice
  • 1 garlic glove
Instructions
  1. Preheat the oven to 170°C / 340°F.
  2. Wash the peppers, cut in half, remove seed, cut in stripes and spread on a baking tray. Sprinkle with 1 tbsp oil. Bake for about 30-35 minutes until the edges turn brown. Allow to cool to room temperature.
  3. Add grilled peppers and the other ingredients to a food processor. Increase the speed slowly. Mix for a few minutes until smooth and creamy. Scratch down from the edge constantly. Add more water or 1-2 tbsp oil if needed.
  4. Taste and season with salt, lemon juice or tomato paste if desired.
  5. Serve with a sprinkle of olive oil and toasted ciabatta.
