In my family we celebrate not only the birthdays, but also name days. Not as big as the birthdays, but at least with a delicious cake and a meal that the “celebrating child” can choose.
Me and my sisters have always wished for something special that we haven’t gotten so often. For example I wanted vanilla croissants, aka VANILLEKIPFERL, as a “cake”. My name day is in September and I didn’t want to wait another three months until christmas cookie time for my favourite biscuits…
Another time I had a crunchy granola on my wish list.
You have to know that we usually “only” got healthy oatmeal muesli for breakfast and cornflakes and crunchy granola were withheld on Sundays.
Having a batch of granola all to myself and being able to decide when I eat it and how much I eat was such a great idea for me.
I really got an extra large bag and my eyes were beaming with the sun.
Now I am that old (please refrain from comments here) that I can bake my own granolas. Whenever I want and as much as I want and the flavor I want.
Aawwweee.
Recently I baked this extra crunchy chocolate granola. It tastes incredibly delicious and is full of healthy ingredients.
The secret behind the special crunch is in the oats. I ground a part of it in a blender. Thus the dry and wet ingredients combine better and huge clusters are created.
If you like, you can add dark chocolate chunks AFTER baking. I skipped that step this time because the chocolate granola tastes really nice like cocoa by itself already.

- 2 cups rolled oats (200 g)
- 1 cup spelt flakes or rolled oats (100 g)
- 1 cup millet flakes or rolled oats (100 g)
- 40 g cocoa powder
- 80 g maple syrup
- 80 g flax seeds
- 90 g coconut oil
- 3 tbsp sesame seeds
- 1 tsp cinnamon
- 0,5 tsp cardamom optional
- 0,5 tsp salt
- 1 tsp vanilla extract

- Preheat the oven to 130°C / 270°F top/bottom heat. Line a baking tray with baking paper.
- Melt the coconut oil gently. Stir in the maple syrup.
- Finely grind 100 g oat flakes in a blender (The oat powder will make your granola super crunchy). Mix them with the remaining dry ingredients in a large bowl. Stir in the liquid and mix well.
- Spread the mixture evenly on the baking paper and press down a little. Bake for about 35-40 minutes. Turn once after 15 minutes of baking and press the granola down again with a spatula.
- Allow the granola to cool completely before breaking it into pieces. Since it only becomes crunchy when cold, the result is really nice clusters.
- Store in an airtight container and consume within 2-3 weeks.
