Ingredients

  • 1 1/2cups spelt flour
  • 2tbsp raw cane sugar
  • 1ripe banana
  • 2organic eggs
  • 1 1/8cup oat milkor your favorite milk
  • 3tbsp Buttermelted
  • 2tsp baking powder
  • 1tsp vanilla extract
  • 1pinch of salt
  • 1/2tsp cinnamon
  • butter or a neutral plant based oil for cooking

Instructions
  1. Mix flour, sugar, baking powder, salt and cinnamon in a bowl. In a separate bowl, finely smash the banana with a fork. Add eggs, milk, melted butter, vanilla extract and mix well with a whisk. Add the liquid ingredients to the dry ones and mix with a spatula until combined.
  2. Heat a pan to medium heat. Add 1-2 teaspoons butter / oil and swirl it around. Add about 1/4 cup dough รก pancake to the pan. Fry until you see little bubbles and the underside is slightly golden (approx. 2 minutes). Turn and bake for another 1-2 minutes. Remove from pan and keep warm until serving.
  3. Repeat until the dough is used up. Serve the pancakes warm with fresh banana slices, berries (optional) and maple syrup.
