Crunchy Almond Granola with Cranberries

Ingredients
  • 2cups rolled oats
  • 2cups spelt oatsor rolled oats
  • 1/2cup maple syrup
  • 1/2cup coconut oilmelted
  • 1cup almonds
  • 1tsp cinnamon
  • 1pinch of salt
  • 1/2cup dried cranberries
Instructions
  1. Preheat the oven to 170°C / 300°F and line a baking pan with parchment paper.
  2. Chop the nuts roughly. Add the oats, spelt flakes (or more oats), nuts, cinnamon and salt to a bowl.
  3. Mix the coconut oil and maple syrup together in a small bowl.
  4. Pour the wet ingredients into the dry and mix well until combined.
  5. Spread the granola out on your baking sheet pressing down until its spread out evenly.
  6. Bake for 20-25 minutes or until golden brown. 5 minutes before the end add the cranberries.
  7. Allow to cool on completely. Store in an air-tight container or jar.
