Crispy ‘n’ Soft Chocolate Cookies | gluten-free
These chocolate cookies are crispy on the outside, soft on the inside and full of delicious ingredients such as oat flakes and nuts. YUM!

  • 1 2/3cups oatsgluten-free if you want
  • 2cups almonds
  • 1/2cup Butterroom temperature
  • 1/3cup muscovado sugaror coconut blossom sugar
  • 1medium organic egg
  • 1 egg yolk
  • 1tsp baking powder
  • 2tbsp corn starch
  • 1pinch of salt
  • 2/3cup chocolate(at least 70% cacao)
  1. Preheat the oven to 170°C / 350°F. Prepare two baking trays with baking paper.
  2. Finely grind the oat flakes with the almonds in a blender. Pour into a bowl. Add the corn starch, salt and baking powder. Cut the chocolate into small pieces.
  3. Beat the soft butter with the sugar in a food processor for 3 minutes until foamy. Add egg and yolk and beat for another 2 minutes.
  4. Stir in the dry ingredients and the chocolate with a spatula until everything is well combined. Using a spoon, place approx. 2 tbsp dough á cookie on the tray at a distance from each other.
  5. Bake for 11-13 minutes until the edge turns golden. Allow to cool completely before removing from baking tray. Store in an airtight container in a cool place.
