Ingredients
Overnight Oats
  • 1cup oats
  • 2medium carrotsabout 80 g
  • 1 1/2cups oat milkor an other plant based milk
  • 1/2cup water
  • 1tbsp chia seeds
  • 5tbsp shredded coconut
  • 1tbsp maple syrup
  • 1tsp vanilla extract
  • 1tsp cinnamon
Topping
  • 4tbsp yoghurt
  • 2tbsp toasted nuts(pecan, almonds,…)
  • 1/2tsp cinnamon
  • 1tsp brown sugar
Instructions
  1. Peel and finely grate the carrots. Mix all the ingredients well in a bowl. Place in the fridge for at least 6 hours or preferably overnight.
  2. Divide the Carrot Cake Overnight Oats into jars and top with yoghurt, roasted nuts, a pinch of cinnamon and brown sugar. Enjoy.
