Ingredients
Overnight Oats

oat milk
or an other plant based milk

chia seeds

shredded coconut

maple syrup

vanilla extract

Topping

Instructions
Peel and finely grate the carrots. Mix all the ingredients well in a bowl. Place in the fridge for at least 6 hours or preferably overnight.
Divide the Carrot Cake Overnight Oats into jars and top with yoghurt, roasted nuts, a pinch of cinnamon and brown sugar. Enjoy.
