I love this time of year. The family gets together for a brunch, hiding nests and play games.

This year the weather was so wonderful, too. With 23°C, good food and funny conversations there’s just a good mood in the air.

Besides eggs, brioche and chocolate bunnies there has to be a cake on the table as well. Have you tried my moist carrot cake with cream cheese frosting yet?

It also tastes delicious after Easter 😉

All you have to do is mix all the ingredients together the night before and put them in the fridge overnight.

Voilá!

The next day you just grab a jar and start enjoying 🙂

Overnight Oats are the perfect breakfast for days when you don’t have much time to prepare something to eat.

Or for those cosy days when you just get up from bed to cuddle on the couch right after and simply don’t feel like preparing a breakfast 🙂

The slightly sweet carrots taste incredibly delicious and go perfectly with the oatmeal, oat milk and cinnamon. They also provide a good consistency and an extra portion of vitamins.

  • 1 cup oats
  • 2 medium carrots about 80 g
  • 1 1/2 cups oat milk or an other plant based milk
  • 1/2 cup water
  • 1 tbsp chia seeds
  • 5 tbsp shredded coconut
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
Topping
  • 4 tbsp yoghurt
  • 2 tbsp toasted nuts (pecan, almonds,...)
  • 1/2 tsp cinnamon
  • 1 tsp brown sugar

Instructions
  1. Peel and finely grate the carrots. Mix all the ingredients well in a bowl. Place in the fridge for at least 6 hours or preferably overnight.
  2. Divide the Carrot Cake Overnight Oats into jars and top with yoghurt, roasted nuts, a pinch of cinnamon and brown sugar. Enjoy.

I don’t see carrots in the recipe ingredients. What’s the quantity of carrots to use?

Thanks for this great recipe! Just tried them for breakfast today and made another glass for tomorrow morning! I didn’t use any water, but full plant based milk. Yum! It’s absolutely delicious!
