Kardamom-Porridge mit karamellisierten Bananen

Especially on colder days nothing lets me start the day better than a delicious, warm breakfast. Porridge is one of my favorites in this category. It is uncomplicated and quickly made, satisfying, filling and healthy. Furthermore, you only need a few ingredients. It can also be changed wonderfully.

Cardamom is for me a total feel-good spice, which is why I often add it to my oatmeal.

Here are some more delicious ingredients that you can mix into your porridge (instead of the cardamom or additionally according to your taste) if you want to change it up:

  • 1 tsp cinnamon
  • 1 tbsp cocao powder and 1 tbsp maple syrup
  • 1/2 mashed, ripe banana
  • 1-2 tsp turmeric powder
  • fresh berries
  • 1 tsp maca powder

I prefer to use oat milk for this cardamom porrigde with caramelized bananas. Since it tastes naturally sweet, I don’t need to add extra sugar or syrup. But you can also replace it with almond milk or classic cow’s milk. In this case I would add 1-2 tbsp maple, date, rice syrup or honey.

That’s why this porridge is extra delicious:

  • Quick oats are particularly suitable for this porridge. They make exactly the consistency a good oatmeal should have: creamy and slightly sticky. If you use rolled oats, just let it simmer a little longer.
  • Before serving, I not only like to top my porridge with a generous spoon of nut butter, but I also stir a tablespoon full into the mixture. This tastes veeery delicious and makes this breakfast even creamier.
  • CARAMELIZED BANANAS. Oh yeaaahh. These bananas are so incredibly delicious. Fry them in a little coconut oil and maple syrup, they get crispy on the outside, caramel-ly and soft on the inside… I’m drooling. Honestly. This topping makes the cardamom porridge from super delicious to MEGA delicious. πŸ™‚

Instructions
  1. Add all ingredients for the porridge to a saucepan. Bring to the boil, then switch back to medium heat and simmer for 5-8 minutes until creamy. Stir regularly.
  2. While the porridge is simmering heat another pan. Peel the bananas and cut them into slices about 5 mm thick. Add the maple syrup, coconut oil, sesame seeds and the bananas to the pan. Fry for about 3 minutes each side until golden brown.
  3. Divide the porridge into bowls. Top with the caramelized bananas, almond butter, cinnamon and the chopped nuts. Enjoy warm.

Super tasty! I used cardamom pods that I popped and then only added seeds. Also stirred in half a grated zucchini for the last minute of cooking. What a fabulous combination of flavours. Perfect for the rainy wet day today! Thanks for sharing!!
