Beetroot Hummus
  • 400g chickpeas, cooked and rinsed
  • 250g beetroot, cooked
  • 1tbsp tahini
  • 1tsp salt
  • 40ml lemon juice
  • 1tsp Cumin
  • 1/2tsp pepper
  • 2tbsp olive oil
  • 4 sourdough buns
  • 2small pears
  • 1 Avocado
  • 100g cream cheese or greek yoghurt
  • fresh salad

Beetroot Hummus
  1. For the hummus, put all the ingredients in a mixer and slowly switch to the highest setting. Mix until the hummus is creamy. If it is too firm, add a few tablespoons of water and 1 tablespoon of olive oil. Season with salt, pepper and lemon juice. Pour into a bowl and put in the fridge.
  1. For the sandwich cut the breads in half. Wash the pears, halve them, remove the seeds and cut into slices. Also halve the avocado, remove the core and cut into slices. Wash the salad and pat dry.
  2. Spread the lower part of the bread with cream cheese. Top with some salad. Generously add the beetroot hummus. Place avocado, pear and sprouts on top. Cover with the upper part of the bread. Enjoy!
