This apple pie chia pudding tastes like an autumn dessert for breakfast. The creamy vanilla chia pudding and the fruity apple cinnamon topping are made in a few minutes and can be ideally prepared the evening before.

Ingredients
  • 1,5cups oat milkor almond, rice, spelt milk
  • 1/3cup chia seeds
  • 1tbsp maple syrup
  • 1/2tsp vanilla extract
  • 2 apples
  • 2tbsp waterwashed
  • 1,5tsp cinnamon
  • 0,5tsp cardamom
  • 1tbsp maple syrupoptional
Instructions
  1. Mix oat milk, chia seeds, maple syrup and vanilla extract in a bowl. Stir again after 10 minutes to avoid lumps. Cover and put in the refrigerator for at least 1 hour or overnight.
  2. Cut the apples into 1 cm pieces. Add apples, water, cinnamon and cardamom to a pot. Bring to the boil once, switch back to medium heat, cover with a lid and simmer for about 5-8 minutes until the apples are soft. Sweeten with 1 tbsp maple syrup if desired.
  3. Layer the chia pudding and the apple compote in glasses. Either enjoy immediately or refrigerate. Use within 2 days.
  4. TIP: This apple pie chia pudding also tastes delicious together with natural yoghurt.
